Foodie Friday: Lemon Meringue Pie

Lately I’ve been super into baking. Whether it’s because I love food just that little bit more or because I have an insane sweet tooth, either way I’ve been baking a lot!

I wanted to try this new series called Foodie Friday where I share a recipe I’ve tried and what I think about it. It could be someone else’s I’m reviewing or it could be one of our family recipes.

This week I wanted to share a favourite in my family at the moment.. Lemon Meringue Pie.

Now I can’t take credit for this recipe, it comes from the best lemon meringue pie maker I know, one of my best friends sisters. She used to make this pie especially when I came over for sleep overs. She would always make sure she had everything for it and if not, we would be making a special supermarket trip just to get it!

Just to give you an idea on how bomb the pie is, two of us could eat the pie in one sitting. No left overs; it’s that good!

So anyway, back to the pie (and now my mouth is watering just thinking of it), it’s a relatively easy recipe and doesn’t require a lot of ingredients.

So let’s get to it!

Lemon Meringue Pie

Ingredients:

Set oven to 180 degrees to preheat

Base:

1 packet of scotch fingers – crushed

Melted butter (as needed)

Put in pie tin and put in freezer

Middle:

2 Egg yolks

1 can of condensed milk

Juice of 2 lemons

Mix all together (I like to use an electric beater) and set aside

Meringue:

2 egg whites (because I love meringue, I use 4 egg whites)

½ cup sugar (if you use 4 egg whites, 1 cup of sugar)

Beat egg until foamy, then add sugar gradually while beating

Meringue is ready when the bowl is flipped upside down and the meringue stays

Pull base out of freezer, pour lemon mix on top and spread, and add meringue on top and spread. Try to limit the amount of spreading with the meringue as best you can to keep the air inside.

Put in oven until meringue is golden and crunchy on top

Side note: the base is always crumbly for me but I enjoy it that way. You can figure out what works for you!

Usually I like to let mine sit for a bit but you can eat hot, warm or cold!
